This entry is wrong as a very quick search on google would reveal.
The term chipolata is French in origin derived through the Italian 'cipollata'. It is a traditional British (and Australian) coarse ground pork breakfast sausage with pepper, salt sage, thyme and pimento, usually not highly spiced. It is made in a thin casing and not long say 10 cm. Generally they are about the size of a man's finger.
They have nothing whatever to do with Mexico.
