A summer internship is most likely a program through which a student from Hogwarts can experience working for the Ministry of Magic during the summer holidays. Bartemius Crouch Jr., disguised as Alastor Moody by means of Polyjuice Potion, accused Bartemius Crouch Sr. of trying to lure Harry Potter into one of these positions. He also alluded to the fact that the last intern who went into the Department of Mysteries was never seen again.

Behind the scenes

The word "intern" being essentially as American English usage, this is presumably one of those modfications made for the film, in order to increase its accessibility for an American audience, and, by extension, an international one, given the prevalence of American English and cultural norms.
