E331 is the European code used to refer to any of the three kinds of sodium citrate (sodium salts of citric acid): monosodium citrate (NaH2C6H5O7), disodium citrate (Na2HC6H5O7) or trisodium citrate (Na3C6H5O7). They are used as food additives, usually for flavour or as a preservative.
Sodium citrate is the acidity regulator used in Lima Lush, a Muggle brand of citrus-flavoured fizzy drink.[1]
